  • WHAT HAPPENS IF I DROP MY VICERA™ CERAMIC KNIFE?

Vicera™ ceramic knives are the strongest in their class. The knife will not shatter or break if dropped from a substantial height. If dropped straight on the tip though, like any other kind of knife, damage may occur. The blade may also chip slightly if it lands on the sharpened edge. The chipping will be minute and should not affect the cutting ability of the blade. Chips and broken tips can often be repaired by re-sharpening.

  • HOW CAN I SHARPEN MY VICERA™ CERAMIC KNIFE?

ViCera™ ceramic blades have been tested and shown to retain their cutting edge 300 times longer than stainless steel without re-sharpening. If you should ever feel that your ViCera™ ceramic knife has lost some of its edge, then it can be sharpened at home with our Diamond Sharpener or sent to our warehouse for re-sharpening. Please see the menu to the right for details on how to send in your ViCera™ cutlery.

  • IS IT SAFE TO PUT MY VICERA™ CERAMIC KNIFE IN THE DISHWASHER?

ViCera™ ceramic knives are dishwasher safe, but we would recommend refraining from using the dishwasher if possible. Dishes tend to move around and may rattle against each other in the dishwasher. Although our blades are the strongest in their class, repeated contact with hard dishware may chip the blade or damage the dishware. For this reason we do not recommend using a dishwasher. If you feel you must use the dishwasher, please take the proper precautions to ensure the knife will not move around or come in contact with other items. ViCera™ ceramic knives are easy to clean by hand. Therefore, simply washing with a little dish soap and warm water is highly recommended.

  • DOES MY VICERA™ CERAMIC KNIFE COME WITH A WARRANTY?

Yes, ViCera™ ceramic knives come with a limited lifetime warranty.

  • CAN I USE MY VICERA™ CERAMIC KNIFE TO CUT ANYTHING?

ViCera™ ceramic knives are meant to cut foodstuffs only. Do not attempt to cut hard objects such as bones, frozen food, metal, glass or earthenware. Do not attempt to cut corn or hard, thick-skinned items such as pumpkins. Doing so may cause the blade to chip or crack. Proper usage ensures that your ViCera™ ceramic knife will last a lifetime.

  • ARE ALL CERAMIC KNIVES THE SAME?

No. The production process and materials used differ from company to company. ViCera™ is one of the only companies producing ceramic knives made in Japan. Many of the other ceramic producers use substandard materials that are mixed with impurities to reduce cost. ViCera™ ceramic knives are made from the purest of Japanese zirconium oxide and are produced using top of the line machinery operated by only the most skilled technicians. Finally, they are hand ground and sharpened to a razor like edge by our master craftsmen.

  • WHY THE "SANTOKU" KNIFE?

In Japanese, santoku is written as ("san-toe-koo") and is comprised of 2 separate characters. The first one, "san", means three, as in "ichi, ni, san," or one, two, three. The second character "toku" means virtue. The three virtues of a santoku knife are slicing, dicing and mincing.

The santoku knife was originally created as a modification of the French chef’s knife. It was purposely designed to be a little shorter in length and was traditionally made of harder steel. The reduction in size made the knife more suited for the preparation of Japanese cuisine and the harder steel meant that the blade’s edge could be ground at more acute angles than the French chef’s knife.

People often ask why the ViCera™ 140cm blade is called a santoku even though it doesn’t have the common santoku shape that is generally seen in the Western world. Originally, there were many shapes for a santoku knife. It was the size, usage and construction that made it a santoku.

  • Usage

Take care when using this knife as the blade edge is extremely sharp.

This knife is used for cutting foodstuffs only. It should not be used for any other purpose such as smashing garlic or any other items by turning the blade on its side.

Ceramic is not able to withstand shock. If dropped from a height the blade is liable to break.

Always use a plastic or wood cutting board to protect the edge.

Do not attempt to cut hard ojects such as bones, frozen food, metal, glass, or earthenware. Do not attempt to cut corn or hard thickened items such as pumpkins. Doing so may cause the blade to chip or crack.

    Do not expose to flames.

Keep out of reach of children.

In time, tiny chips may appear on the blades edge. This happens to all ceramic knives and does not affect the knife's cutting ability.
